Working with a price adjusting table

I want to calculate a new price for the product category when in the future
the price changes

I have a simple price increase table

Example :

for category01 the price increases with 5 % from date 1/02/2021on
then again a price increase from 01/04/2021 with 10 % and so on

can this pattern be extended when we add another column say product?
