I would like to get the last 7 days of loads as per table below.
As you see I have started the DAX but not sure if this is the right thing to do and if it is why it does not work.
Slightly confused by what you are asking, usually most helpful to included a sample PBIX file.
If I’m understanding you correctly, why don’t you simply use your date table, add the date to either the page or the visual and filter to last 7 days?

Yes, I am now doing what you suggested with a filter for date.
Now that I have the filter for date, How can I set the end date to be today?

You can either add the date filter as a visual level filter or as a page level filter and set it like the image below. Your choice is whether you want “Include today” ticked or not.
